I've selected "shoppe" over "shop" because I use this spelling in my everyday writing, despite me being an American.
It sounds more expensive yknow what i mean.
The spelling, especially the 'e' at the end adds more class to the general word.
I like shoppe since it is the original English term.
The spelling, although antiquated, appears more proper.
It seems to give it more of an eccentric, homemade--compared to mass produced--style. It feels more close to home!

I believe this spelling is more elegant looking when written on signage. And, the kids in my class like it.

that's how i learned it from the nuns :)
because the average american wont take time out of their day to look up the differences between shop and shoppe they will assume that the extra letters are from a different language or a fancier way of saying an every day word, creating a false sense of finery.
It sounds far more classy
Shoppe gives an old world feel, something holding higher value as in being imported or handcrafted or specialty.
Because shop sounds like the short version of shoppe.
